Let the cooking begin! Step 1 - Soak the beans for 10 minutes. Step 2 - Prepare the containers for your Moin-Moin. Step 3 - Season and boil the fish for 20 minutes. Cut into small portions. Boil the eggs until hard (say 15 minutes) remove shells and cut to quarters. Step 4 - Remove the bean-husks by rubbing between your palms. Do not worry if you cannot separate all of the husks. Try to get as much as possible off. The husks should float when you add water for rinsing. Sift off the husks to leave the white peeled beans. You can skip this step by using Peeled Beans. Step 5 - Using a standing blender, blend the beans, Red Bell Peppers, Scotch Bonnets, onions, Shrimps and water together until you get a smooth paste. Step 6 - Add 4 tablespoons of water to the seasoning cubes. Crush to a paste. Add salt. Step 7 - Pour 2 cups of water in the base pan of the steaming pan and start to boil. If using a normal pan turn the steaming basket upside down and add water to boil. Step 8 - Pour the paste at step 4 in the mixing bowl. Pour the melted seasoning and salt (step 5). Add the fish boiled eggs and oil. Stir for a few minutes. Pour in foil containers. If using Moin-Moin leaves, shape the leaves into a cone, pour in paste and fold. Step 9 - Place the containers on the upper layer of your steamer pans, cover and steam for 45 minutes or until hard to touch. If using a regular pan, place the steamer basket, cover and steam for 45 minutes. Moin-Moin is best steamed. However, you can also bake in an oven. | |||||
